There is a strange phenomenon I've been watching at the shuk. Beautiful Israeli women crowd vegetable bins and climb over each other to load their agalaot (carts) with smooth, green outer-space looking vegetables I learned are fennel bulbs.

Watching this with interest, I wondered what all the fuss was about.
So I set to discover what's so great about fennel. And that led me
to a whole new vegetable world I'm only just
beginning to explore.
