Brunch or Breakfast strata recipes for an easygoing morning gathering. Strata is an easy make ahead egg casserole. Each crowd pleasing recipe for cheese strata here is a delicious, kosher and a vegetarian friendly recipe.

Every Strata Recipe starts with this basic formula 2 parts bread +1 part cheese + 1 part add-ins + 1 part eggs +1 part milk. I'll get you started with some TNT delicious ideas for this classic breakfast casserole. Once you get the hang of it you'll be cooking in the "stratasphere" Queen in the Kitchen style—your style.
This recipe makes a large casserole to serve 12-15 people. Active time is about 20 minutes.
1. In a large heavy skillet over moderate heat, melt 3 tablespoons butter and cook add-in vegetables stirring, until soft, 4 to 5 minutes. Add 1/2 teaspoon of the salt, 1/4 teaspoon of the pepper, and add-in seasonings. and cook, stirring, 1 minute.
2. Spread the bread cubes in a buttered 13x9x2-inch dish. Top evenly with add in mixture. Sprinkle cheese over all.
3. Whisk together 4 cups milk, 18 eggs, and remaining seasoning in a large bowl and pour evenly over ingredients in the baking dish. Shake dish to settle custard throughout the pan. Cover and refrigerate for at least 8 hours.
4. Preheat oven to 350°F. Let strata stand at room temperature 30 minutes. Bake strata, uncovered, in middle of oven until puffed, golden brown, and until it does not jiggle when shaken, about 45 to 55 minutes. Let stand 5 minutes before serving.
Follow master recipe above using 8 cups cubed French or Italian bread as the bread base.
Add-in mixture is1 (10 ounce) package frozen chopped spinach, thawed and squeezed of excess liquid, 1 large onion, finely chopped, 8 ounces button mushrooms, thinly sliced. Saute all in butter until soft then add 1 teaspoon salt, 1/2 teaspoon pepper, 1/4 teaspoon nutmeg.
Cheeses are 3 cups coarsely grated Mozzerella or other mild white melting cheese such as Gruyère and 1 cup Parmesan cheese, finely grated.
To the egg mixture blend in 2 tablespoons Dijon mustard.

Add-in mixture is one large onion, 3 medium chopped tomatoes, drained, 3 large portebello mushrooms, cubed and 1 small eggplant (or large zucchini), cubed, 2 chopped garlic cloves. Saute all in butter until soft then add 1 teaspoon salt, 1/2 teaspoon pepper, 1 teaspoon basil, 1 teaspoon oregano, 1 teaspoon thyme, 1/2 teaspoon dried chiles (optional).
Cheeses are 3 cups shredded mozzarella, 1 cup crumbled feta or goat cheese.
Mexican Breakfast Casserole

Add-in mixture is one large onion, 3 medium chopped tomatoes, drained, 3 large bell peppers, cubed, 1/2 cup sliced green olives 1 small can diced chilies, 2 chopped garlic cloves. Saute in butter until soft then add 1 teaspoon salt, 1/2 teaspoon pepper, 1 teaspoon cumin, 1 teaspoon smoked paprika.
Cheeses are 3 cups shredded cheddar or jack cheese, 1 cup mexican creama or crumbled goat cheese.
To the egg mixture add chopped cilantro or a tablespoon of dried oregano.
