Chick Chock Salad Mix

Salad Mix is great time and energy saving idea: Spend 15 minutes chopping a large amount of salad vegetables. Mix together with a delicious salad dressing. For dinner or for a quick nutritious lunch, spoon out the desired amount to toss with greens of your choice.

1 cup celery, chopped

1 cup bell pepper, chopped

1 cup carrots, chopped

1 cup onions, chopped

1 cup tomatoes, chopped

1/2 cup hearts of palm, sliced

1/2 cup mushrooms, sliced

1/4 cup olives, chopped

1 large cucumber, chopped

1 dill pickle, minced

1 teaspoon capers

1. In a 2 quart container, combine any combination of vegetables listed to equal 6 to 7 cups. Cover well with a vinegar based salad dressing, store bought or homemade like "Hometown Dressing" and mix well. Cover tightly.

Makes: 12-15 servings ~ Must make ahead
