Braised Carrots in Marsala Wine
one of my best easy carrot recipes

Unlike most easy carrot recipes, this one has adult appeal with the addition of Marsala wine. The alcohol in this sweet wine cooks out, leaving a rich sauce kids of all ages will enjoy.

2 tablespoons margarine

1 shallot, peeled and chopped finely

1 pound carrots, peeled and sliced on the diagonal into 1/2" pieces

1/2 teaspoon kosher salt

1/4 cup Marsala wine

1. In a large skillet over medium low heat, melt margarine. Add shallot, cook and stir until translucent, about 3 minutes.

2. Add carrots and salt. Cover and cook 15-20 minutes until soft, adding water if needed to prevent sticking.

2. Pour in Marsala and stir uncovered until liquid evaporates, 3-5 minutes. Serve warm.

Makes: 4-6 servings ~ Can make ahead
