Simple Oven Roasted Cauliflower

Roasted cauliflower completely transforms the humble vegetable from one that often gets passed over into something we just can’t get enough of. The high heat browns and caramelizes, giving the cauliflower a slightly crisp texture and complex flavor that is irresistible.


1 head of cauliflower, broken into florets

2 tablespoons olive oil

1 teaspoon kosher salt 

1 teaspoon curry, cumin, garlic powder or chili powder, optional

1. Preheat oven to 400 degrees. Place the cauliflower in an large baking pan and toss with salt, olive oil and optional seasoning. Spread into one layer.

2. Roast 20 minutes, use a metal spatula to move the roasted cauliflower around. Continue roasting 20-30 minutes until the cauliflower looks golden brown in places. Serve it warm or room temperature.
